Department of Cookery

Hello friends, I am Barış Irkdaş. I am a student of cookery department at Istanbul Ayvansaray University. I would like to talk a bit about the cookery department. Our department is one of the best departments you can choose to prepare your meals professionally. What does this mean? The dishes prepared in the outside restaurants are prepared by our graduates. This is the department where you learn how professionals prepare food, for example, in restaurants, in cafes, outside the home, what you cannot prepare at home. If I want to mention our main lessons: We have cooking styling and photography, local kitchens, examples from international cuisines, pastry and styling and food culture courses. In Yenibosna we have a big kitchen under the Han Hotel. Twenty people can easily take lessons there. Apart from that, if necessary, thirty – thirty five student can also join our lessons. Our internship includes thirty working days. It is possible to do internship in restaurants, in professional places and kitchens. After doing internship at restaurant, you can pass an approval by the department head. You should fill internship book, report what you do every day and submit it to the department. In the graduation project, graduation thesis is given to the department of cookery. This is what happen: You are writing a thesis on chickpea, lentil or any other legume-like product. You are writing a thesis on this topic. You are preparing by the approval of your department head. And once you get his approval, you have to deliver these assignments by the end of the semester. Likewise, at the end of the semester, you are give a presentation in front of four different teachers. So you are entering the jury. You get score after the presentation. However, you develop three products on your topic you are researching. In other words, you develop a product that you have not seen before, which you have never taste before, and you offer it to your teachers.

You can work in different kitchens in the restaurants, kitchens of cafes and catering sector. You can take part in organizations, private surveys, weddings, or important meals - such as protocol dinners. This department was already my preference. Actually I've been in this industry for a long time. But of course in Turkey, every profession now require certificate or diploma. As the certification process is applied in all professions, I chose this department for self-development. I chose this department because I want to continue this profession professionally. İstanbul Ayvansaray University was one of the biggest reasons why I chose it: Before choosing this school, I came here and get information from teaching staff and the department chair personally, I visited the kitchen. That affected me positively. The school took me in a very good mood, as if I were a student here. Feeling myself already here, I chose this as my first preferences.

First of all, one of the most important factors that influence me is the behavior of teachers. Once you enter the school, it is very easy to go from one place to another. Transportation is really very easy. Whether it is the lessons in Balat or our cuisine in Yenibosna, we can easily reach from one place to another with our special services or with many public transport like Metrobus. It is also a great advantage that the school's services take us to the school. This was very important to me. Apart from that, the atmosphere here, the collective activities with the students… whether its library of research papers that school has opened to us or DVD together with other movies… a system of entry and exit with our student card, that is to say the security and the atmosphere inside our school, all of which affected me positively. After graduation, what I get here as information, I will try to catch up with the right people, the right chefs, the cooks, the correct working environment that I can put into practice. It is a great advantage from my teacher that i know many chefs directly. The environment I got from this place is a great benefit. My post-graduation plan is to work in a job where I can do Turkish cuisine better and more practically. My most important recommendation to friends who would prefer our university is to investigate the convenience and difficulties of the culinary profession in the school and business area. This profession is not just what you see. Because, this profession will carry you to a very good places, but for this it is a profession that you need to have a very good education first and then you have to work very hard after that. I would like to wish a successful career to all the friends who will choose the cooking profession.
