Hello. I am Emel Öktem Güngör, Assistant Professor of Yuksek Ihtisas University, Faculty of Health Sciences, Department of Nutrition and Dietetics. Nutrition Principles Laboratory is utilised within the scope of Nutrition Principles Course. In this course, we study macro and micronutrients in our diet. In other words, we look at the functions of carbohydrates, proteins, fats, vitamins and minerals in our body and their condition when insufficient and excessive intake of their resources occur. We support the theoretical knowledge that we have covered in this course through focused practical laboratory sessions. Although our laboratory looks like a kitchen, it consists of 4 different units. All tools and equipment that can be found in an ordinary kitchen are also included in these units. After covering the theoretical part of our lesson, in order to reinforce it better, we also perform the recipes in leaflets we prepared in this kitchen. Besides preparation, cooking and processing techniques, in this course, we observe what kind of changes occur when meals are made or foods are heated and what kind of losses or gains they experience when they are cooked. Within the scope of this course, we work on the preparation process and cooking techniques in meals and changes and reactions that occur during cooking. When it comes to what this course will bring to our students in professional life regarding Nutrition Principles, it is important for our students to see what kind of losses will occur in the foods and what kind of changes will be made while they are prescribing or explaining a diet to the patient or client. It is also significant in order to show what kind of losses or gains will occur in mass nutrition systems.
